Langhe Doc Nebbiolo

We interpret Nebbiolo THAT [Così] way: elegant, gentle and authentic; our prince wine. Because we are from the Langhe and our most territorial vine is Nebbiolo, our production choice respects its natural vocation without forcing the vine to go further; for these reasons we dose the use of wood in such a way that it does not mask the oenological nature of the vine.

Langhe Doc Nebbiolo

Elegant, well-structured yet fine and delicate wine. Light varietal red, with a distinct aroma of violets, roses and red berries, as well as notes of aging wood. Its strong but refined character emerges on the palate, with unobtrusive tannins and an almost sweet finish. It pairs perfectly with soups, pasta dishes, white and red meats, and medium-aged cheeses.

TECHNIQUE

What we actually do...

Harvested by hand in boxes in October. The grapes are pressed and transferred into temperature-controlled stainless steel tanks. Traditional fermentation with daily pumping of the must over the cap for at least 20/30 days, following which the wine is drawn off into casks of French oak holding 25 hl and/or second/third-fill French oak barriques. The Nebbiolo d’Alba stays here for 12/18 months before being bottled in Bordeaux bottles with natural corks.
